Double Fudge Chocolate Coca Cola Cake

Trying to perfect the Double Fudge Chocolate Coca Cola Cake...I have tried scratch cake mixes and box cake mixes. I have used mayo, pumpkin, marshmallows and sour cream. I just can't get it quite right. Every time I go to the Cracker Barrel I question the wait staff. Trying to pry info out of them on this rich chocolate delite! I think I might have to moonlight as a waitress...maybe? LOL I have made many different versions of this recipe. I have sacrificed my diet many times to sample this lovely dessert. I have however mastered the icing. A perfect blend of coke, icing sugar and butter OMG! When I finally get the cake part right LOOK OUT

What August???

 Hello Imaginary Friends its been too long!!
Where did May and June go? What I missed July too! It seems the older I get the faster time gets away on me. Spring cleaning done , gardening done, weeding ongoing and my RHUBARB patch!! 
 I love it! My "patch" is a mixture of several different kinds of rhubarb, so when I use it in a recipe I get a blast of sweet and tart flavours. Rhubarb can be used in salsas, sauces, cakes and so much more. Rhubarb muffins are high on my fav list, but my very favourite recipe is Rhubarb Custard Pie.
This is my Momma's recipe for...
 
Rhubarb Custard Pie!!!
 
YUMMY
2 Cups fresh Rhubarb
1 Cup Sugar
2 Tbs Butter
2 Tbs Flour
1 Egg 
 
Crumble Topping:
2 Tbs Sugar
4 Tbs Flour
2 Tbs Butter
Mix dry ingredients together with the butter and egg, Add the rhubarb and mix well. Dump in to a pre prepared crust I usually use a frozen pie crust...but if you have an easy crust recipe use that! I am just too lazy to make one from scratch LOL!! Mix the crumble topping ingredients together and spread over the top of the raw pie. Sometimes I throw some rolled oats in just to make the topping extra crispy. Pre heat oven to 350 degrees. Place the pie on a cookie sheet on the middle rack of the oven and cook approx 45mins or until golden brown. Let cool and dig in!!! So Enjoy...I can usually eat the whole thing myself! Oh my tummy hurts just thinking about it!

My Imaginary Friends

Because Sunday night was a no sleep night...I played alone in a dangerous place! My mind!!!! I decided that my followers needed to be named. You will now be called "My Imaginary Friends"
I also played in one of my favorite places Pinterest! I wanted to share a very popular recipe with you. I love chocolate and peanut butter so I am always on the hunt for yummy combs.
 
Peanut Butter Cup Brownies
Makes 40 brownies as adapted
1 box of your favorite brownie mix
1/2 cup peanut butter chips
1/2 cup semi-sweet chocolate chips
3/4 cup creamy peanut butter
 
Preheat oven to 350 degrees. Spray or grease 40 mini-muffin cups.
Prepare boxed brownie mix as directed. Spoon batter evenly into muffin cups (about 1 heaping teaspoon). Bake for 13-15 minutes or until top is set and a toothpick inserted into center comes out slightly wet. After brownies are out of the oven, wait for centers to fall. This will happen upon cooling. If not then tap the centers with the back of a teaspoon to make a hole for the peanut butter.
Place peanut butter in a small microwave-safe bowl. Microwave on high for 45 seconds then stir. While brownies are still warm spoon about half a teaspoon of peanut butter into the center of each brownie. Top with semi-sweet chocolate chips and peanut butter chips. Cool completely in pan.

Birthday Flip Book

I still really don't believe it...a very good friend of mine turned the BIG 50!!!! I met her when I was 18, first day of Hairdressing School. She changed my life. She was so cool and confident...I thought. I came to realise that she was just a big marshmallow! I love her!!! I wanted her to know that she means the world to me so I made this little flip book for her birthday.

I purchased this blank book at http://www.scrappingreatdeals.com/ and using my "scraps" I created this beautiful little memory album. I used old pics of the two us and I wrote a special poem. There are spaces for her to put her own pics and journal too. She cried...best response ever!
